This recipe from the Pioneer Woman had me at “Simple” and “Enchiladas”. We love us some Mexican food here in Texas and this recipe does not disappoint! This one is a keeper in my house.
My only changes/suggestions: cut down on the green onions and to make it healthier, don’t fry the tortillas. I just covered them with a wet paper towel and microwaved it for about 30 seconds…that helps make them easy to fold and not break.
