If you’re looking for a great recipe that can feed your family for a few days, I have a great one for you.  This is a delicious chipotle shredded beef that I have made many times and it doesn’t disappoint.  A special thanks to my friend Renee Thomas who graciously shared this recipe with me a few years ago.

Chipotle Shredded Beef

2 ½ lb beef chuck roast, trimmed
14 oz can diced tomatoes
7 oz can chipotle peppers in adobo sauce (use peppers only and remove seeds from chilis if you don’t like it too spicy)
4 oz can diced green chiles
1 onion chopped
2 tablespoons chili powder (the kind you use to make chili (not the spicy kind))
1 teaspoon ground cumin
14.5 oz can of beef broth
Salt and pepper to taste

Place roast in a crock pot.  Top with all the ingredients above.  Cover the crockpot and cook on high for 5 to 6 hours, or on low for 8 to 10 hours.  Once the beef is ready, it will easily start to fall apart.  Once the beef is cooked through, use two forks to shred the beef in the crockpot.  Once shredded it is ready to serve.

This beef is so tasty and versatile, and since it makes a large quantity, it can be eaten for a few days and repurposed in different ways.

Here are some of the ways I have used this beef in different dishes throughout the week.

Chipotle Beef Tacos – On the day I first make the beef I serve it with flour or corn tortillas and top with lettuce, tomatoes, and shredded cheese.  (You can alternatively make a burrito with the beef, rice, and veggies or a rice bowl topped with the beef and veggies of your choice.)

Quesadillas – Add flour tortillas to a skillet on the stove, add the cooked beef and shredded cheese, top with another flour tortilla and heat until the cheese melts. Cut into slices and serve with guacamole, sour cream, or salsa.

Barbecue Beef Sandwiches – Add the cooked beef to a skillet and add barbecue sauce until mixed and heated thoroughly.  Serve on on toasted bread or hamburger buns

Barbecue Pizza – Add the cooked beef to a skillet and a little barbecue sauce until mixed and heated thoroughly. Add barbecue sauce or marinara sauce to a store bought or homemade pizza crust, add mozzarella cheese, beef, red onions, and a little gorgonzola/blue cheese crumbles.  Bake in the oven until the crust is ready and the cheese has melted.
