Hi friends! It’s been a minute since I’ve made a cooking video, so please pardon my bad angles (my video crew is in college)!

With that said, if you are looking for an easy South Indian beef curry/ beef fry recipe, I’ve got one for you!

KERALA BEEF CURRY/ FRY (easy version-
Santhama Samuel’s recipe- tweaked & simplified)

STEP #1 Cover the base of your pot with oil.

STEP #2 Once hot, add 1/2 tsp mustard seeds. Let the mustard seeds pop.

STEP #3 Add 3 medium sized onions (thinly sliced), 10 cloves of garlic (minced), 1-2 inches ginger (minced), 2 green chili peppers (sliced in half, lengthwise), a handful of curry leaves.
Sauté well.

STEP #4 In a spice mill, grind: 2 tbsp fennel seeds, 4 cloves, 3-4 cardamom, 5-7 black peppercorns

– Add ground spices to the above sautéed onion mixture. (Optional: you can roast your spices in a separate pan before adding to the onion mixture)

– Add 2 tbsp coriander powder, 2 tsp turmeric, 1 tbsp salt, 1 tbsp red chili powder, 1/2 tsp cinnamon. Stir well
(Optional: At this point, you can add 1 tsp tomato paste- stir & sauté)

STEP #5 Add approximately 2 pounds of cut & washed beef (any kind- roast, chuck, stew) Stir well

STEP #6 Cover and cook on medium high heat for 3-4 minutes

STEP #7 Add 1 cup of hot water (or enough to cover beef). Stir.

STEP #8 Cover & cook beef for approximately 45 minutes on medium heat. Stirring frequently. (Optional- you can add a handful of 1” thinly sliced coconut, sautéed )

STEP #9 Once cooked, you can remove the lid & continue cooking until most of the water has absorbed (this may take an additional 10-15 minutes), stirring frequently. If you choose to do this, the dish becomes more of a beef fry than a beef curry. (Optional- add a teaspoon of coconut oil & heat through)

STEP #10 Garnish with chopped cilantro (optional).

~I prefer this dish on day 2, after all of the flavors have seeped into the beef.
