In Titus 2:5, Paul encourages older women (that’s me ) to teach younger women (that might be you) how to ‘stay busy’ or as some translations put it, ‘maintain a home’…and girls, part of maintaining a home might involve a little cooking.
But don’t worry…the recipes I post are always simple & do-able.
Today, we will be making…drum roll please ? ???…
Potato Mezhukkupuratti!!!
Don’t let the crazy English spelling of this simple South Indian dish intimidate you. It’s pronounced more like potato merry-courti or as my sister & I used to say, Potato Marykutty.
It really doesn’t matter how you say it.. here is how you make it.

Binu’s Potato Mezhukkupuratti:
Step #1 Wash & Peel 3 medium size potatoes.
Step #2 Slice potatoes lengthwise. Wash potatoes again.
Step #3 Slice 1 onion (lengthwise) & 2 green chili peppers (lengthwise)
Step #4 Place potatoes, onions, green chili peppers and lots of curry leaves in a deep skillet.
Step #5 Add 1 Tsp turmeric, 1-2 Tsp garlic powder & 1 tbsp salt. Drizzle with oil, then mix with hand
Step #6 Add a splash of water, cover and cook on medium high heat for approximately 5-7 minutes. This allows for the potatoes to cook & soften in the steam. Stir frequently.
Step #7 Once the potato is soft, uncover & drizzle more oil on top. Increase heat & Stir frequently, allowing the potatoes to brown.
