I love Thanksgiving and I LOVE the day after Thanksgiving! The day my mother-in-love makes turkey cutlets with all the left over turkey. It’s become an annual tradition for our family (not to mention a family favorite).

Mom’s cutlets are amazing. Thankfully, she was kind enough to share the recipe with our Whispers & Fringes family:

SANTHAMMA SAMUEL’S AMAZING TURKEY CUTLETS:

What you will need: Onions, Garlic, Ginger, Curry Leaves, Pepper, Leftover Turkey, Mashed Potatoes, Masala Spices, Eggs, Breadcrumbs, Oil

PREPARATION FOR CUTLET-

Finely Chop
4 Onions (Yellow, Red, or White)
1 cup Garlic
1 cup Ginger
5-6 stems of Curry Leaves (remove from stem and mince)
2 Green Peppers (Jalapeño, chilli or any other pepper of choice)

Blend in a Food Processor
Approximately 3- 4 pounds of Cooked (& Seasoned) left over turkey (can also use chicken or beef)

Grind Spices for Meat Masala In a Spice Grinder:
4-5 cardamon, 1″ Cinnamon stick, 1/2- 1 tbsp black pepper, 1 tbsp Fennel Seeds, 4 cloves, 1 tsp coriander powder, 1/2 tbsp chili powder
(you’ll have extra masala)

Prepare Egg Wash:
Whisk 2 eggs & 2 tbsp water and pour in a shallow dish/ bowl

Take Out:
Left over Mashed Potatoes (or you can Boil 3 big potatoes & mash)

1 Large Can of Bread crumbs- Grind in spice grinder to make it as fine as possible then pour into a shallow dish/bowl

THE PROCESS:

-Heat oil in a large Skillet (use a decent amount of oil since you have a lot of ingredients to sauté)
-Sauté Minced Ginger & Garlic
-Add finely chopped onions, curry leaves, peppers to skillet
-Sauté Well (till Almost Brown)
-Add Cooked, Seasoned, Minced Meat,
-Add Salt & meat masala to taste (add in small increments)
-Add mashed potatoes
-Stir Entire Mixture Well & Heat Through
-Allow Mixture to cool

Important: Taste & Make sure there is enough flavor- adjust meat masala & salt accordingly to taste

TEAMWORK: Grab a few friends or family members & form an assembly line. It’s good bonding time and it’ll make the process go much smoother ?

Person 1: Divide meat into patties (similar to a meatball shape)
Person 2: Dip meatballs into egg wash and Place into bread crumbs
Person 3: Shape the cutlets into an oval shape and cover well with the bread crumbs

Step 1: In a large deep skillet/pan- Heat Oil (wide & deep enough to fry multiple cutlets in)
Step 2: Place 4-5 Cutlets in Pan, Let Brown, Then Strain & Remove from Oil
Step 3: Remove Excess crumbs or residue from oil & make sure the oil is ready for a second batch of cutlets
(Repeat Steps 1-3)

Please adjust the recipe according to your personal taste, preference & the amount of meat you have.
