As a young child, our family Thanksgiving meal consisted of Indian food. We had asked our parents if we could eat turkey like all of our friends at school. 

So when turkey and the sides were added to the menu, we couldn’t be happier. Being that it was new to us, side dishes such as mashed potatoes came from a box, and corn and yams came from cans. Every year, we enjoyed great food and fellowship with my extended family as we had the best of both cuisines for our Thanksgiving meal.

Then, I moved to Texas 16 years ago and my sweet friend Vijoy introduced me to a whole new world: casseroles. Since that first Thanksgiving here, I have been whipping up all of my side dishes from scratch and I couldn’t be happier.

I discovered this recipe for a sweet potato casserole several at Allrecipes years ago and it has been a hit with my family.

The only modification I make is instead of cooking the sweet potatoes on the stove, I actually scrub clean three sweet potatoes, prick them all over with a fork, and bake on a foil-lined baking sheet at 425F for 40-45 minutes. I let them cool, then split them open with a knife, and remove the potato from the skins to mash.
