My son has a few food allergies that make it difficult for him to eat at any Asian restaurants.  So I’ve started trying to make some Asian dishes at home so that I can modify it to accommodate his allergies and I can sneak in vegetables that my kids find tasty enough to eat.  One I’ve recently found and have made many times now is this Spicy Thai Basil Stir Fry.  This recipe has only a few simple ingredients that you may be able to get from your local grocery store, or you may need to get from an Asian grocery store.

If you are looking for a quick and easy recipe to try, I would suggest this one.  I have made this with chicken breast cut up into thin slices, and also with beef.  Both are very good and my family enjoys it.

Ingredients

4 garlic cloves, peeled 
2 thai chillies 
2 large mild red chillies, roughly chopped 
4 tbsp oyster sauce 
2 tbsp fish sauce 
1 tsp sugar 
2 tbsp oil 
500g (1 lb) meat (e.g. beef, pork, chicken – can be ground, or sliced thin) 
2 large zucchinis, cut into bite-sized chunks 
1 cup basil leaves (e.g. Italian basil or Thai basil or a mix of both) 
steamed rice to serve

Steps

  1. Use a mortar and pestle to pound the garlic and chillies to a rough paste.  I have also just chopped them very finely on a cutting board.
  2. To make the stir-fry sauce, mix together the oyster sauce, fish sauce and sugar. 
  3. Heat the oil in wok or large frying pan over high heat. Add the paste and cook for half a minute. Then add the meat and stir-fry for 3-4 minutes or until just cooked. Add the zucchini and the stir-fry sauce. Stir-fry for another 1-2 minutes. Toss through the basil. Remove from heat and serve with the rice.
