Today we are going to make a VERY SIMPLE South Indian chicken curry. (It’s a simplified version of my mother in love’s recipe).

But before we get started, I wanted to give you a brief explanation as to why…with a gazillion cooking videos out there on you tube…I would choose to create one more. ?

It’s part of the Titus 2:5 mandate.

In Titus 2:5, Paul encourages older women (that’s me ) to teach younger women (that might be you) how to ‘stay busy’ or, as some translations put it, ‘maintain a home’…and girls, part of maintaining a home might involve a little cooking.

Don’t worry, the recipes I share are simple & easy. So if you are looking for an easy chicken curry recipe…I’ve got one for you!

Now let’s get started…

EASY KERALA CHICKEN CURRY
(Santhama Samuel’s recipe- tweaked & simplified just a little)

STEP #1 Cover the base of your pot with oil.

STEP #2 Once hot, add 1/2 tsp mustard seeds. Let the mustard seeds pop.

STEP #3 Add 3 medium sized onions (thinly sliced), 5 cloves of garlic (minced), 1 inch ginger (minced), 2 green chili peppers (sliced in half, lengthwise), a handful of curry leaves.
Sauté well.

STEP #4 In a spice mill, grind: 2 tbsp fennel seeds, 4 cloves, 3-4 cardamom, 5-7 black peppercorn, 1/4 star anise
– Add ground spices to the above sautéed onion mixture. (Optional: you can toast your spices in a separate pan before adding to the onion mixture)

– Add 2 tbsp coriander powder, 2 tsp turmeric, 1 tbsp salt, 1 tbsp red chili powder, 1/4 tsp cinnamon. Stir well

(Optional: At this point, you can add 1 tsp tomato paste or chopped tomatoes- stir & sauté)

STEP #5 Add 1 whole chicken (cut & washed- I buy mine pre-cut at my local Indian store). Stir well.

STEP #6 Cover and cook on medium high heat for 3-4 minutes

STEP #7 Add 1 cup hot water OR 1 cup thin coconut milk (1 tbsp coconut milk powder + 1 cup hot water). Stir.

STEP #8 Cover & cook chicken for approximately 30 minutes on medium heat. Stirring frequently.

STEP #9 Once cooked, you can add half n half, heavy cream or coconut milk to the chicken curry to suit your desired flavor and consistency. (Stir & Heat through)

STEP #10 Garnish with chopped cilantro (optional).

Pray, eat & enjoy!
