If you are looking for a tasty recipe to add to your lineup, I have great one for you! This white chicken chili is a great dish that I have made many times for my family and guests alike. Every time I serve it, I get rave reviews :)
Here are some modifications that I make based on my family’s personal preferences as well as ease of getting it made quickly.
- For the chicken I use the pre-cooked chicken fajita meat from grocery store and cut that into cubes. Alternatively, I have used cooked rotisserie chicken from the grocery store that I remove the skin and chicken from the bone and shred it by hand before adding to the recipe.
- I saute the cooked chicken along with the garlic and onions and a little bit of oil for about 5 minutes on the stove before adding it to the soup
- I don’t use beans since my family doesn’t like beans. Instead I add a can of original Rotel (tomatoes and green chilies)
- I use 1 can of green chilies instead of 2
- I use more broth than the recipe calls for. Typically I use 64 oz of chicken broth, instead of just 24 oz.
- If I’m in a hurry, I prepare the entire recipe on the stove instead of using a crock pot. I mix in all the ingredients after sauteing the chicken/onion/garlic mixture and let the ingredients simmer on the stove for about 30 minutes. I wait until near the end of cooking to add the cream cheese and half and half.
